| 1/2 cup | feta cheese, crumbled | 125 ml |
| 1/4 cup | onion, finely chopped | 50 ml |
| 2 tbsp. | black olives, pitted and finely chopped | 30 ml |
| 1 tbsp. | chopped fresh parsley | 15 ml |
| 4 | olive fougasses (flat bread from Provence), sliced in half lengthways | |
| 1-2 | tomatoes, sliced | |

| 4 tbsp. | store-bought tzatziki sauce | 60 ml |
Combine ground pork, feta cheese, onion, olives and parsley. Shape into four patties approximately 1 cm (1/2”) thick.
Cook burgers on medium heat on the barbecue, under the broiler, or in a grill pan, for 6 to 8 minutes. Midway through cooking, flip burgers using a spatula.
Enjoy your burgers in mini fougasses with slices of tomato, lettuce and tzatziki sauce.
Substitution
Replace the fougasse with a Kaiser or burger bun, and the olives with capers.
Serve with a green salad with sliced cucumber and your favourite salad dressing.

Ground meat does not keep as long as larger cuts of meat. Cook the meat to the recommended time to eliminate any bacteria. Keep in mind that the plate on which you kept your raw meat may have been exposed to bacteria; avoid placing your grilled burger on the same plate. Be very careful!
