| 1 tbsp. | olive oil | 15 ml |
| 1 | onion, thinly sliced | |
| 1 | ripe mango, peeled and coarsely chopped | |
| 3 | fresh tomatoes, diced | |
| 1/2-1 tsp. | hot sauce (such as Tabasco or Thai sauce) | 2 to 5 ml |
| 2 tbsp. | fresh coriander, chopped | 30 ml |
| To taste | salt and freshly ground pepper |
In a non-stick pan, heat oil over medium heat. Sauté the onion for 2 minutes. Add mango and tomatoes and continue cooking for 2 minutes. Add hot sauce and coriander. Continue cooking for 1 minute. Season to taste.
