Exotic Salsa

Ingredients

1 tbsp. olive oil 15 ml
1 onion, thinly sliced  
1 ripe mango, peeled and coarsely chopped  
3 fresh tomatoes, diced  
1/2-1 tsp. hot sauce (such as Tabasco or Thai sauce) 2 to 5 ml
2 tbsp. fresh coriander, chopped 30 ml
To taste salt and freshly ground pepper  

Cooking Instructions

In a non-stick pan, heat oil over medium heat. Sauté the onion for 2 minutes. Add mango and tomatoes and continue cooking for 2 minutes. Add hot sauce and coriander. Continue cooking for 1 minute. Season to taste.
